Autumn Apple & Cheddar Galette
A free-form rustic pastry filled with thinly sliced tart apples and sharp cheddar. Sweet, savoury, and deeply satisfying — the taste of autumn in pastry form.
Ingredients
- Pastry: 1½ cups all-purpose flour
- Pastry: ½ tsp salt
- Pastry: 1 tbsp sugar
- Pastry: 8 tbsp very cold butter, cut into cubes
- Pastry: 4–5 tbsp ice water
- Filling: 3 tart apples (Granny Smith), peeled and sliced thin
- Filling: 2 tbsp sugar
- Filling: ½ tsp cinnamon
- Filling: Pinch of nutmeg
- Filling: Squeeze of lemon
- Filling: 1 cup sharp cheddar, coarsely grated
- Filling: Egg wash + extra sugar for the crust
- Filling: Drizzle of honey to serve
Instructions
- Make pastry: combine flour, salt, and sugar.
- Cut in cold butter until pea-sized pieces form.
- Add ice water a tablespoon at a time until dough just comes together.
- Flatten into a disc, wrap, and chill 30 minutes.
- Toss apple slices with sugar, cinnamon, nutmeg, and lemon.
- Roll pastry into a rough 12-inch circle on parchment.
- Scatter grated cheddar over the centre, leaving a 2-inch border.
- Arrange apples over the cheese.
- Fold pastry edges over, pressing lightly.
- Brush crust with egg wash, sprinkle with sugar.
- Bake at 400°F for 35–40 minutes until deeply golden.
- Serve warm with a drizzle of honey.
