Peach & Burrata Crostini
A sun-kissed bite of Italy, with honeyed rosemary oil — where warm peaches, soft cheese and rosemary drift into summer. Tastes like Tuscany.
Ingredients
- 8 slices rustic bread
- 1 ball fresh burrata
- 2 ripe peaches, sliced
- 3 tbsp olive oil
- 1 tsp honey
- 2 sprigs fresh rosemary
- Sea salt and cracked black pepper
- Chopped pistachios
Instructions
- Toast the bread until golden and crisp.
- Make the honey-rosemary oil: warm the olive oil gently with the honey and rosemary, then let it infuse.
- Assemble the crostini: spoon burrata onto each slice and lay the peach slices over the top.
- Drizzle and season: spoon over the honey-rosemary oil, then finish with sea salt, cracked pepper and chopped pistachios.
Grill the bread for extra flavour, and use the ripest peaches you can find.
