Ingredients

Instructions

  1. Heat the oil in a large pot over medium-high heat.
  2. Brown the lamb on all sides. Remove and set aside.
  3. In the same pot, sauté the onion, carrots, celery and garlic until softened.
  4. Return the lamb to the pot.
  5. Add the broth, water, rosemary, thyme, salt and pepper.
  6. Bring to a boil, then reduce heat and simmer 1½ hours.
  7. Add the potatoes and cook for 20 minutes.
  8. Add the peas and simmer for 5 more minutes.
  9. Taste and adjust seasoning.
  10. Garnish with fresh parsley.
