Rustic Potato & Herb Soup
Warm, simple, and cottage-soft — the kind of comfort that settles in when the world slows down. Potatoes turn velvety with almost no effort.
Ingredients
- 2 tbsp olive oil
- 1 tbsp butter
- 1 large potato, diced small
- 1 small onion, chopped
- 1 clove garlic, minced
- 2 cups broth (vegetable or chicken)
- A splash of milk or cream (optional)
- Handful of fresh herbs (thyme, parsley, or chives)
- Salt & pepper
- Optional: pinch of nutmeg or smoked paprika
Instructions
- Warm the olive oil and butter in a small pot until cozy.
- Add the onion and cook until soft and sweet, about 5 minutes.
- Stir in the garlic and diced potato; let them mingle for a minute.
- Pour in the broth and simmer until the potatoes are tender, 12–15 minutes.
- Mash lightly with a fork for a rustic texture.
- Add milk or cream if you want it cottage-creamy.
- Season generously and fold in the herbs.
- Serve with a slice of warm bread or a drizzle of olive oil.
The steam and herbs make the whole kitchen smell like a cabin tucked in the woods.
