Rustic Potato Pancakes
A big-batch farmhouse potato pancake — nothing but potatoes, onions, and just enough flour to hold. Crisp at the edges, tender in the middle.
Ingredients
- 10 lbs potatoes, peeled and grated
- 5 lbs onions, peeled and grated
- ½ cup all-purpose flour
- 2 tbsp salt, or to taste
- 1 tsp black pepper, or to taste
- Oil for frying
Instructions
- Peel and grate the potatoes and onions.
- Place in a large bowl and mix together.
- Sprinkle with salt and let sit for 10 minutes.
- Squeeze out excess liquid.
- Stir in flour and pepper.
- The mixture should hold together and look like thick pancake batter.
- Heat oil in a large skillet over medium heat.
- Drop by large spoonfuls and flatten slightly.
- Fry until golden brown on both sides. Drain on paper towels.
Keep the mixture thick — it should spoon and hold together, not run.
