Cabin Chili
A hearty, smoky chili made for cold nights by the fire. Gets better the longer it simmers.
Ingredients
- 1½ lbs ground beef or venison
- 1 can (15 oz) kidney beans, drained
- 1 can (15 oz) diced tomatoes
- 1 can (6 oz) tomato paste
- 1 onion, diced
- 3 garlic cloves, minced
- 2 tbsp chili powder
- 1 tsp smoked paprika
- 1 tsp cumin
- Salt & pepper to taste
Instructions
- Brown meat in a heavy pot over medium-high heat.
- Add onion and garlic; cook until soft.
- Stir in tomato paste, then add tomatoes, beans, and spices.
- Simmer uncovered on low heat for at least 1 hour, stirring occasionally.
- Serve with cornbread or crackers.
