The Unfinished Moment Stew
A rustic recipe for the things we felt but never said. Warm, grounding, and slow — it's what your nervous system needed.
Ingredients
- 2 tbsp olive oil
- 1 yellow onion, diced
- 3 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, chopped
- 2 potatoes, cubed
- 1 lb stew beef (or mushrooms for vegetarian)
- 1 cup red wine (optional but poetic)
- 4 cups beef or vegetable broth
- 1 tbsp tomato paste
- 1 tsp smoked paprika
- 1 tsp thyme
- 1 bay leaf
- Salt & pepper to taste
- Fresh parsley for serving
Instructions
- Warm the oil in a heavy pot.
- Brown the beef (or mushrooms) until they take on color.
- Add the onions and garlic, letting them soften slowly.
- Stir in the carrots, celery, and potatoes.
- Pour in the wine, letting it hiss and rise.
- Add broth, tomato paste, paprika, thyme, and bay leaf. Bring to a simmer.
- Let it cook low and slow for 1.5–2 hours, until everything relaxes into itself.
- Taste and season well.
- Serve with fresh parsley.
