Cozy Apple Cinnamon Oatmeal Cookies
Soft, chewy oatmeal cookies full of warm fall flavors — diced apple, cinnamon and nutmeg, with optional nuts and dried fruit. A little bite of comfort in every cookie.
Ingredients
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla
- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 3/4 cup finely diced, peeled apple
- 1/2 cup chopped pecans or walnuts (optional)
- 1/3 cup raisins or dried cranberries (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream the softened butter and brown sugar until light and creamy.
- Mix in the egg and vanilla.
- In another bowl, combine the flour, oats, baking soda, cinnamon, nutmeg and salt.
- Gently combine the dry ingredients with the butter mixture.
- Fold in the diced apple and, if you'd like, the nuts and dried fruit.
- Drop rounded spoonfuls onto the baking sheet and gently flatten each one.
- Bake for 11–14 minutes, until the edges are lightly golden. Let them rest on the baking sheet for several minutes before moving them.
Make them extra cozy: serve slightly warm with chai, cinnamon tea, coffee, or warm apple cider.
