Rustic Rainy-Day Chickpea & Rosemary Stew
A bowl that feels like shelter from the storm. Chickpeas turn buttery with almost no effort, and rosemary with tomatoes makes that deep cottage-kitchen aroma.
Ingredients
- 2 tbsp olive oil
- 1 small onion, thinly sliced
- 2 cloves garlic, smashed
- 1 can chickpeas, drained
- 1 cup crushed tomatoes
- 1 cup vegetable broth
- 1 tsp rosemary
- 1 bay leaf
- Salt & pepper
- Optional: splash of cream, smoked paprika, drizzle of honey
Instructions
- Warm the olive oil in a heavy pot until shimmering.
- Add the onion and cook slowly until soft and golden.
- Stir in the garlic and chickpeas.
- Add the tomatoes, broth, rosemary, and bay leaf.
- Simmer 12–15 minutes until thickened and cozy.
- Season to taste; add cream or honey if desired.
- Serve with crusty bread or over rice.
